I enjoy meals that are simple and don't need a lot of ingredients. I can buy a spaghetti squash and put in the fridge for weeks before I use it. I love that. And I always have frozen broccoli on hand. So this is an easy meal idea for me that doesn't require a trip to the store to get items not on hand.
Step 1: Cut your squash in half ontop of a cutting board. Some are easier to cut through then others. I find it easiest to use a long sharpe knife and basically stab it right in the middle and get my knife all the way through to the other side. Then I pull it down one half. Then I turn the squash around and remove my knife and use that original slit to insert my knife back in and pull it down the other side of the squash. Then it just pops apart.
Step 2: Remove the inner guts of your squash. This is exactly like what you do with a pumpkin on Halloween. Remove all the seeds and stringy guts and place it into the trash. You don't need that part.
Step 3: Place both halves on a baking sheet lined with aluminum foil (or in a baking dish). Generously rub olive oil on both halves of your squash and then sprinkle with salt and pepper.
Step 4: Place it in a 350 degree oven and bake for about 1 hour, maybe more. I check my squash with a fork to make sure it's nice & tender, if it's not ready - bake it some more. Just don't forget about it.
It will look like the below picture when you remove it from the oven.
Step 5: While your squash is baking, cook your broccoli. In a skillet add 1 tablespoon of Minced Garlic and heat it up. Then add a handful or more of broccoli. The amount of broccoli depends on the size of your squash and how much you prefer. Add some Red Pepper Flakes and Cook your broccoli until it's tender.
Step 6: Let the squash cool until you can touch it without
burning yourself. About 10 minutes or so.
Step 7: Use a fork to pull the squash from it's shell. This is where it starts to resemble spaghetti. Put the shaghetti pieces in a bowl as you remove them. I often use kitchen sheers as well for this part. They come in handy. Remove ALL of the delicious spaghetti from each shell and try NOT to break the shells. You want to use the shells to stuff and bake them in again so be careful.

Step 8: In a bowl, mix together your spaghetti squash and your broccoli. Then pour it back into the squash shells.
Step 9: Next, add on some Mozzarella cheese. Add as much as your little heart desires... or as much as each shell can hold.
Step 10: Place your baking sheet with stuffed shells back into the oven and bake for about 10 minutes so your cheese can melt on top. Once your cheese is good and melted, remove it from the oven.
Step 11: Enjoy your delicious and simple dinner.
